Oftentimes, we are resistant to change especially when it comes to the meals we eat. It becomes difficult to change our menu when challenges like life-threatening health or age issues set into our lives.

But changing your diet doesn’t have to be stereotypical! It can be fun and interesting if you can be creative.

As Christmas draws closer, Think Akwa Ibom will be sharing some special recipes with you. This week, we are sharing a lovely recipe prepared by Mrs. Idara Kalu called Edikang Ikong Ally”. An Edikanikong soup special prepared for High blood pressure patients.

This soup is prepared without salt or MSG but garnished with crayfish and fish powder

Tips: fish powder is simply dried tiny fishes picked and ground. They are rich in calcium, zinc, iron and essential oils.

Ingredients

  • Pumpkin leaves 500grams
  • Waterleaf 250grams
  • Dried Catfish 5pieces
  • Stock fish 4 fleshy parts
  • Cow skin (kpomo) – your desired quantity
  • Unshelled periwinkles – 1 cup
  • Ground crayfish – 1 cup
  • Ground dried fish – 1 cup
  • Fresh Palm oil – 1 cooking spoon
  • Onions – 1 medium size
  • Ground pepper – 2 teaspoonful

In a pot boil your stockfish and cowskin, season with just onions and ground pepper, allow to boil until soft and stock are almost dried. Pour in your shredded water leaves and unshelled periwinkles, allow the soup to cook on low heat, add fish powder, more dry pepper, and cover the pot.

Allow simmering for 5mins

Pour in your crayfish and Palm oil, Allow to simmer for 3 minutes.

Add your pumpkin leaves and stir. Turn off the heat and allow to cool.

Enjoy with wraps of oats or plantain swallow.
